The fluffiest Pancakes

There are many different recipes for making fluffy pancakes, but one simple and delicious option is to use the following ingredients:
1 cup all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
2 tablespoons vegetable oil
1 large egg
1 teaspoon vanilla extract
To make the pancakes, whisk together the flour, sugar, baking powder, and salt in a large mixing bowl. In a separate bowl, whisk together the milk, vegetable oil, egg, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined, being careful not to overmix the batter.
Preheat a griddle or large frying pan over medium-high heat, and lightly grease the surface with oil or cooking spray. Pour the batter onto the griddle in 1/4 cup portions, and cook until bubbles form on the surface of the pancakes and the edges begin to look dry. Flip the pancakes and cook on the other side until they are golden brown and cooked through. Repeat with the remaining batter, and serve the pancakes warm, topped with your favorite toppings, such as syrup, fruit, or whipped cream. Enjoy!
